The menu is the written word of taste, like the guide book to a city, it accompanies you into the restaurant, where every street corresponds to a dish, every crossroad a speciality. At Calamara it is possible to taste traditional fish dishes prepared with particular touches: fresh fish every day allows the menu to vary depending on the day's catch, and thus to guarantee freshness and quality, at the heart of each dish. Dinner becomes a voyage, where the menu is the logbook on which to annotate discoveries, experiences from the universe of taste and cooking: the menu is a Moleskine, onto which the crew of Calamara write, almost daily, the specialities prepared by the Captain-Chef for his guests. The ideal menu has the taste of mussels au gratin, tuna tartar, fresh pasta with cherry tomatoes, shrimps and asparagus, oven-baked stuffed calamari, all rinsed down with excellent white wine.
